Bacon Wrapped Pork Loin

Ingredients:

  • 3 lb pork loin (trimmed of any excess fat)
  • 1 pkg. think cut bacon (Approx. 12 slices)
  • 1 bottle (14 oz.) WheelyQ Original Recipe Barbecue Sauce
  • WheelyQ SPG Seasoning

Marinate:

  • Place pork loin in large Ziploc bag and pour entire bottle of WheelyQ Original Recipe Barbecue Sauce into bag. Seal and marinate for 24-48 hours

Prepare Pork Loin:

  • Lay down 6 slices of bacon vertically and 6 slices horizontally, then weave together.  (WATCH TUTORIAL)
  • Apply SPG Seasoning to pork loin generously
  • Wrap pork loin with weaved bacon and secure with toothpicks

Big Green Egg Smoker or Grill Preparation:

  • Preheat smoker or grill to 275 degrees
  • Using indirect heat and hickory wood for smoke, cook pork loin for 1.5 – 2 hours or until internal thermometer reads 145-150 degrees
  • Remove from grill, wrap in foil and let rest for 15 minutes
  • Remove all toothpicks
  • Cut into 1/2″ slices and drizzle with any remaining juices as well as some WheelyQ Original Recipe Barbecue Sauce
  • Enjoy!

Oven Preparation:

  • Preheat oven to 350 degrees
  • Place pork loin in shallow roasting pan and roast for 1 hour or until internal thermometer reads 145-150 degrees
  • Remove from oven, wrap in foil and let rest for 15 minutes
  • Remove all toothpicks
  • Cut into 1/2″ slices and drizzle with any remaining juices as well as some WheelyQ Original Recipe Barbecue Sauce
  • Enjoy!
